Hot Hamburger

"Hot Hamburger” is a specialty of Murphy’s Original Steak House West in Bartlesville, Oklahoma. Murphy’s famous “Hot Hamburger” puts french fries and gravy over the burger.

The recipe for “Hot Hamburger” from the Whitehead Memorial Museum (below) is quite different and is more of a Mexican pâté.

Whitehead Museum Hot Hamburger
This Mexican pâté has been a tradition at Del Rio for generations. The family recipes for Hot Hamburger are closely guarded secrets; but this one from Estella Munoz, Director of the Whitehead museum, was the result of experimenting, testing and tasting.

Yields: 6 cups
1 pound lean ground beef, raw
4 ounces cooked ham, chopped
1 cup celery, chopped
1/2 pound Cheddar cheese
1 small onion, chopped
1 apple, peeled, cored and chopped
40 saltine crackers, crumbled
2 lemons, juice and pulp
Salt and pepper to taste

Mix all ingredients together and put through a food processor, blender or, best of all, a meat grinder to make a pâté. Blend in any good hot sauce slowly until desired degree of hotness is reached.

A hot hamburger plate is a dish from the southeastern United States. It consists of a slice of bread (usually white) with a hamburger patty placed on top. This is then covered in french fries and then brown (beef) gravy. Cheese is sometimes incorporated (usually a slice of american or cheddar). This dish is occasionally compared to the Canadian dish poutine and the northeastern American dish disco fries.

Forget calories, forget lo-fat, and throw carb counting out the window!! I had my first Murphy’s Hot Hamburger about 5 years ago and I’m still in love. When I walked in I was warned by my friend that they had brown gravy and it was poured over everything. But for one second I forgot and when I saw it, thought chocolate? Well, I tried one and it was delicious. The fries are real fresh cut potatoes. This is not a dieter’s meal. It’s shear indulgence food.  [18 Jul 2003 11:25:32]
